Untouched wild roses

I live in the North Central Cascades, near Leavenworth. This area is known for apples, peaches and pears and lovely gardens, but because of deer no one here keeps roses. Yet the wild roses are shade tolerant and blooming, untouched by the deer. They even have rose hips left on them! I am on a quest to learn why.
